Preparation of pasta with strangozzi and truffle

Pasta with strangozzi is a typical dish of Umbria-Marche cuisine, characterized by a sauce based on strangozzi, i.e. a typical pasta in the shape of an elongated “ribbon”. To prepare this recipe, you will only need the products in the package. Consider the whole package of strangozzi and the package of seasoning as products to be used together and add only extra virgin olive oil and salt.
First of all you need to boil some water (about 0.8-0.9 liters for every 100 grams of pasta), when the water starts to boil we add a handful of salt and cook the pasta, the cooking time is about 15-20 minutes, you need to check it on the packaging of the pasta itself.

When the pasta is finishing cooking, take a ladle of cooking water, pour our sauce into a pan large enough to sauté the pasta in and mix in the ladle of cooking water, heat everything over a low heat.

As soon as the strangozzi are ready, drain them directly into the pan with the seasoning, sauté everything and serve, in a few minutes we will have a truly exceptional dish. Add a drizzle of extra virgin olive oil to the dish.

Preparation of pasta with strangozzi and wild boar ragout

To prepare our dish of strangozzi with wild boar we recommend adding a few small ingredients to further enhance the flavor of this recipe. To prepare this recipe, you will need: strangozzi, half chopped onion, 100 grams of diced bacon, 50 ml of dry white wine, extra virgin olive oil q. b., salt q. b. and of course some sauce with wild boar seasoning.

While we put the strangozzi cooking in a pan with water and salt, we prepare our seasoning. Put the chopped onion in a pan, add just a drizzle of oil and heat. As soon as we see the oil sizzling, we add the diced bacon and continue cooking until the bacon becomes crispy. As soon as it is ready, pour in the ready-made wild boar seasoning and mix to make everything uniform.

When there are 2-3 minutes left until the pasta is cooked, drain and bring the strangozzi directly into the pan with the sauce and finish cooking by mixing everything together calmly.
