The roveja di Norcia is a wild pea that has ancient origins but has literally disappeared from agricultural production. It finds its ideal production grounds above 500 meters above sea level, it is a resistant product and is as big as traditional peas. The color is varied, when the product is fresh it has a tone between green and gray, with drying it tends to brown. It is used for various recipes and is excellent both as a winter product (for excellent soups) and as a summer product.
The flavor is very similar to broad beans, but for some it can also remind you of the taste of chickpeas.
