The Black Chickpeas of Norcia are a true jewel of the Umbrian peasant tradition. Grown in the fertile hills of Norcia, these legumes are distinguished by their dark, thick and wrinkled skin, and by their intense and slightly herbaceous flavor, very different from that of common chickpeas.
With a rustic and enveloping scent, they tell a story of simplicity and genuineness: that of the cuisine of the past, made of poor ingredients but rich in flavor.
Directions for use
Ideal for soups, soups and rustic salads, the Black Chickpeas of Norcia are also perfect as a side dish or base for alternative soups and hummus.
After soaking for about 24 hours, they cook slowly, releasing an aroma that smells of earth and tradition.
Chef’s tip: try them with a drizzle of Umbrian extra virgin olive oil and a sprinkling of fresh rosemary: a simple but extraordinary dish.
